That is what a blowoff valve is for.

Even at wide open throttle shifts when you unload the motor when you shift you will lose some boost. Now there are functions of Anti'lag where when you are lifting off of the gas or when the load is decreased, but still at wide open throttle it will go into anti-lag and hold boost where it is at.

If you can shift fast enough, you can only let off the throtal a little which keeps the turbo spinning as fast as possible

People with the stutter box shift don't have to let off at all.

On all cars doesn't matter what it is you will lose boost. Now I am not saying all of the boost. Even with a diverter blow off valve. And beleive you ain't gonna shift fast enough. Our trans in our car was a dog engagement box and only cut the ignition when we shifted for a few milliseconds and you lose boost between the shift everytime. Your gauge might not show it, but in data logs with a good sensor and fast logging you will see it.
