Which manual steering rack?
You can do it by just removing the lines and adding a breather for the rack. I did it a couple years ago, and I haven't had any problems. The only time I notice it is when I'm trying to turn the wheel when the car isn't moving, or if I'm going less than like 2-3mph, and even then it's not that bad. Padawan used to sell a p/s removal kit, and it's the one I'm using. You can see it in this thread:
