the ring 'gasket' when bolting on an external wastegate
my external wastegate has a metal ring that fits in the flange of the wastegate, before i bolt it on, and that leaves a gap so when i bolt it on it doesnt really seal the gasket.
is it better to do it that way? or just not use that metal ring and get a good gasket seal instead?

No you need that ring, thats what actually seals it up. you could put a gasket in between the fire ring and manifold if you want but they usually just blow out. I just use the fire ring, no gaskets. But yeah, you NEED that ring.
