Car jerks when stepping on the gas...
This has been a long term problem ever since Ive owned my car a few years ago. Whenever I step on the gas the car has a jerky feeling to it. Same thing occurs when I let off the gas. At first I thought it might has something to do with my transmission since Ive grinded the gears a few times in the past. But now im starting to think that it might actually be my engine mounts. I also got a new stock engine last march since the other one crapped out on me after 150,000 miles. It has roughly 80,000 miles on it now. When they do an engine swap do they keep the stock engine mounts that are originally on my car or does the new engine come with them as well? Im just trying to find out if this is a transmission or engine mount related problem....
a broken rear mount will cause the car to shake excessively and a broken front mount will cause the car to slam during shifts
In answer to your question: the new engine will NOT come with new mounts. You will have to purchase them seperately.
Considering you already have an issue possibly caused by one (or more) mounts, It's a good idea to replace them when you drop in the new (to you) engine.

I presume it's a manual transmission (from your 'grind the gears' comment); and I would have to answer no. With a manual transmission, it's either connected or disconnected. There are no "clutch packs" like an automatic, and you've made no observations about the clutch malfunctioning.
And I have to 'adjust' my prior observation about the engine mounts (I had read your post incorrectly). The shop you had the engine installed at may very well could have reused the old engine mounts. They could well have avoided the additional expense and passed over the correct practice of installing new mounts for a job like that. I would have replaced them.....

Correct. The spark plugs are fine. I like to keep them new and change them often.

The tension on the throttle cable is fine. I checked that awhile ago.

Correct. The spark plugs are fine. I like to keep them new and change them often.
