Stock white eg interior?
I was wondering if all white eg hatches come with blue interior only, and if so how much does it typically cost to get the panels/carpet/dash in black? and has anyone have good word about the dash paint??

Dash paint, sometimes makes sense as far as 6th gens due to people wanting black, and not wanting to pay outrageous prices and spend months searching down the rare black parts.
A 5th gen black interior isn't particularly hard to find. Just slowly piece it together and sell off your blue parts as you get the new black ones.
If you decide to use it, the vinyl paint is ALLL in the prep work. If you don't use the proper stuff to prep it right your paint will come off very shortly and leave you in worse shape than you began.
There's a good write-up on here called DIY EK Interior 56k beware or something that has all the steps on it, if I get bored later I'll find it for ya. My suggestion is just to piece together black parts.
