will this sensor work with s300 in place of the oem sensor?

It will work, will not display the correct temp.

You can still pipe it into the ECU as an AUX 0-5v input. Just have to configure it to read properly

For datalogging purposes only maybe.

The Honda eprom editors on the market such as Crome, eCtune, Hondata, Neptune do not allow IAT value re-scaling.
They use the factory IAT sensor input values to reference temperature.
