Baking Pan/Pots out of Stainless.

Baking Pan/Pots out of Stainless.
Does anyone know what type of Stainless is normally used for pots and pans in the kitchen? My sis is taking classes for baking and wants to maybe open up her own bakery, so i thought i would make her a custom pan of some sort with some SS we have at work. Do they get coated by anything when they are finished? Is it 316, 308, other. Any info would be great. Thanks.

Stainless in good cooking hardware is usually referred to as 1810. I don't know if that corresponds to an alloy as we know it.

EU 18-10 is what most sites and catalogs list but it seems that that refers to something with the European Union and their import/export of steel?
Maybe you will have a little better luck looking around haha. Sounds like a pretty sweet idea.
On a side note. The bakery close to my home uses alot of aluminum sheets/pans.
