clutch release fork bent mildly question
would this be enough to cause the clutch to not disengage?
seems very minimal... I have replaced all clutch (hydro) components and the clutch itself...

Minimal? That may as well be a mile apart. The slave cylinder doesn't move as much as you think. I could definitely see that causing pressure plate release issues.

Clutch will not disengange.
I tried adjusting the master cylinder clutch rod all the way out, all the way in, in the middle. It will not disengage....
the car will go through the gears with the tires off the ground while they are spinning. If they are not spinning it does not want to go into gear.

B series clutch since it wasn't mentioned?
Clutch disc spit a spring out, very common.
If you kept forcing the clutch pedal with a bad disc you likely bent the clutch arm in doing so.

Here's something to think about.... Potentially over torqued pp bolts to flywheel?

Over torquing the pressure plate bolts would be impossible to cause your issue. The pressure plate lays flat on the flywheel anyways.
The system is pretty basic. If your slave cylinder is stroking out properly then either your clutch arm is in the wrong spot or the throw out bearing is on wrong or hanging up/blocked. Unless of course the disc is bigger than one of the surfaces...
Are you positive your slave cylinder is functional and bled properly?

*update* car is at the shop, they will let me know what they find. All they said was it wasn't disengaging....
