Default weird over heating ?

i just my ls/vtec done and runiing just fine. BUT i can let the car idle for as long as i want i guess and the temperture stays at 180 degrees. (i let it idle for 30min in my driveway) but as soon as i took it for a drive ( very easy didn't get above 4500rpm) the temperture went up to like 210 degrees and my cooling fan never came on.

so then i straight wired me a temp switch so the fan could run and it still stayed at 210.

anyone got any ideas.

im gonna take a wild guess, and say you didn't bleed your cooling system since you got everything installed.
