oil temp, more problems

I've taken the oil cooler out completely, so all I have now is a Moroso oil pan, and a relocated filter with -10 lines. The oil temp sensor is on the top front of the oil pan.
The problem is, whenever the car is in motion, oil temp never registers (gauge starts on 120F). If I let it idle at a stop it will slowly start to rise. When I was doing HPDE's with the oil cooler it would rise up to 160-180F and stay there after a few minutes. So are are my options:
1 - the oil pans extra capacity, plus it's radiating heat out from the oil better
2 - something is wrong with the oil temp sensor (which I just put in), which would mean it's running really hot when I was doing HPDE's
I really thought it was the oil thermostat, but I've got the cooler and thermostat out now and it's still acting the same. Nor does the gauge seem to be the problem.
