Do you have to change the oil cooler? The machine shop is saying that the cooler could contain metal shavings and should be changed. Is this absolutely necessary?

i wouldn't do it...lots of shops like that will bullshiet you into getting more work done from them. if anything, get a front mount oil cooler, that'll give you way more cooling that the stock unit
