What are the benefits of having a 5 channel amp over 2 amps, seperates amps for speakers and sub?

i cant really reply with anything but the basics. 2 amps would be more expensive, more difficult with installation, takes up more space, etc... but i would think that having two seperate amps (4 channels for the interiors, mono bass for the sub) would sound a little better, and would be safer running the sub to a seperate amp to prevent the amp from blowing easier.

Benefits would be easier to install, less expensive to install, more compact to install. Those are the benefits.

so the only benefits of having 2 seperate amps is a slight increase SQ and smaller chance of blowing the amp...?

THe benefit of SQ in the seperate ams is dependant on the power supply(s) of the single amp. If the single amp has multi power supplies there might not be a benefit. The problem lies in a 5 channel amp with single power supply that shares components, especially capacitors, when a heavy bass note hits the power surges and can cause the tweeters to clip or just distort. On seperate amps the bass hitting only affects the bass amp's power supply, unless the battery/alternator is weak. You can help this by getting a beefy cap to some extent.

If you blow a 5 channel amp, you have to get a new 5 channel, if you blow one of the 2 ch, you just have to get a 2 ch.

A five channel amp also has moderate power ratings in comparison to what you will get with seperate amps. Simpler install though. If you are running expensive speakers, it will not be enough power since most 5 channels max out at 50 watts per channel and 200 or so to the sub.

I prefer 2 amps because of better flexibility, even though it is more expensive at the beginning.

This is my current setup: https://honda-tech.com/zerothread?id=368957

Im considering getting a 10" sub just to add to my system to make it complete, not over-do the bass side of it, but I also dont want to under-power my sub or speakers.
