Default chipped ecu tuning question

ok this may come across as a very dumb question and for that I apologize. I've never been to a dyno tuning session. I've trid searching on here and on the net and cant seem to find a straight or clear answer. I understand how the stock ecu is chipped and burned with a base map using a rom editor or whatever, but what I dont understand is the process when it comes down to the dyno tuning. I assume that between the pulls that are made on the dyno the tuner makes changes to the existing basemap using a lap top? Is that correct? What confuses me is how is the lap top connected to the car with this type of engine management? There is no way to connect the lap top straight to the ecu or does the tuner have to keep pulling the chip from the ecu each time between pulls to burn the changes onto the chip using the rom editor? Can someone clear this up for me? I've been wondering this for a long time and would like to understand how it is done before I go to get my car dyno tuned?

We use emulators for real-time tuning. The chip is burned with the final map.
