STILL Overheating EH3!!!!

I just spent a long time changing my head gasket today on the advise of a good friend because my car was overheating. Yes, the head gasket was blown but....the car still over heats. It runs like a champ when im driving on the freeway or on the back roads taking alot of turns but once that car is idling the temp shoots up. I noticed the fan was not turning on when the car was overheating. I already ordered the t-stat (because its cheap and easy to put in) and I dont think its the water pump or fan.
Am I wrong or will the t-stat solve it?

it won't hurt to change the t-stat...does the temp go right up after you stop!!! does the temp rise at idle, if say cruising at 60 in neutral? if only at standing still, just wire a toggle switch for the fan and flip on around town-what I did...it;'s way cheaper, and you run a few degrees cooler. Won't be the t-stat though, cause it just runs off temperature.
