Bouncy/High idle around 750 to 1000(maybe 1100 on a shitty day)
I know when the motor is cold it can idle higher, I'm used to that but it fluctuates a lot when it's at normal op temp. What can be the cause of this? What can I check? What can I do to fix this? I'd really appreciate some help, thank you.

is your timing straight ?
is your timing straight ?
here are a couple of things. does it idle irratically when you start the engine or threw out the rpm range? if it's at the start when's the last time you did a tune up? check for any vacuum leaks, check your timing belt, and also your egr valve.

Did the problem occur after they (whoever) did the timing belt? Again, tune ups are sold for the companies to make money, they rarely fix problems unless the parts are faulty due to high mileage, such as plugs, wires, cap, rotor, etc.
unplg or get a new censor. the one i'm talking about is on the back of your throttle bodie, and it sideways. either unplug and you'll just throw a check engine light, but it wont do nothing to the performance.
No it was doing this before they looked at it.
If I'm not mistake the IAC is a small black horizontal cylinder on the back of the TB. The clip is vertical, I unplugged the clip and it stalled. What could the reasoning for this be?
