Default Best way to wire water temp gauge?

What's the best way to wire a water temp gauge? should i splice a wire off the temp sending unit or speedometer or place a sensor in the upper coolant hose?

speedometer? ummmm

I tap all my power wires for all my gauges from the old Cruise Control harness since it's no longer in use. As for the water temp, i have a mechanical one and it will be threaded into the back of the head if i recall correctly... wasn't paying much attention when my mechanic explained where and how he was going to mount it, but i do remember him saying that drilling the head would most likely be involved. I recently saw a set of replacement radiator hoses that had a place in the top one for the water temp sensor to make the install easier.
