Is the head on yet? It could be your headgasket or possible your valve seals if it isnt your rings. Compression test your motor that will help you get an idea.

did you machine the head? replace the headbolts? its prolly a blown headgasket because you didn't do it the proper way.

there is also a .001 chance you can have a clogged cat. i had a car with a clogged cat because it sat for years, and when i started it ran crappy, and smoked like a bitch... new cat solved the problem. but i dont think you have a clogged cat, also like he said, what color is the smoke?

Big smoke is often due to worn Valve stems/guides. You did put a dial indicator on your valve stem playBefore assembly?? If not.. you get to do it now :-)
Rings also should be at least checked pull th oil pan and a piston seeing as the head will be coming off again.. and measure end gap also check the ring lands they are likely full of carbon.
Usually claimed "good' engine parts are simply Lies by the seller... absolutely check everything ..Before.. installs, nothing proves/disproves claims like a measurement.

check your spark plugs, the might too tight. Sounds dumb but you will feel dumber if it is that
