How long should a final drive install take, provided the trans is out of the car?

You don't simply just install a FD without going through the rest of the tranny, night as well replace the ISB and seals while it is apart.

Without cleaning the case it would take 3-4 hours to do it right, sometimes even longer as I go over it a few times.

Straight swap could be done in Nader an hour.

However like said above you should go through the tranny while its apart, replace bearings, seals, and properly shim the mainshaft and diff. As well as a good cleaning. 3-6 hours

Under 45 minutes in the pits.

2-12 hours doing it properly depending on the equipment you have available.

I just installed a final drive, LSD, and carbon synchros. I already had the correct shims for the diff and the countershaft. It took almost 4 hours including a run to the parts store for gasket maker.
