How do you insure a hybrid that you have tons of money in, but blue books says isn't worth much?
Say if it gets stolen, do you get the full amount that you had in it, or just blue book?

usually the blue book, but some insurance companies will work with aftermarket mods if you have receipts to them.

Talk to your insurance company and keep receipts for everything you do to the car.

I've had my past two cars stolen, so I've learned the tricks around insurance companies. I keep all my reciepts laminated in a binder in chronological order as well as pictures of the car after every single upgrade. Now in my case, most insurance companies want to pay you as least as possible, even though we pay them outrageos amounts each month. When I went through my last claim on my Integra, they said if the car comes with it then when replaced it doesn't matter. They said I wouldn't get anything for my Sparco's because my car came with seats. They said they wouldn't cover my quaife because the car came with a differential, and so on and so on down the list. But yet right off the bat they were going to cover my Racing Harts. I told them the car came with wheels, so why would they cover those and not all my other parts. So I took a day off of work, sat down with the head honcho for state farm where I live and had a 5 hour meeting discussing legitimate prices for parts and so forth. I haggled and ended up getting $7500 more than what they were going to originally give me. Too bad I still lost almost $10000, but better than nothing. My new insurance agent keeps copies of all my reciepts, as well as pictures of my car on file at his office. So if anything happens, both he and I have proof of all the modifications and money put into the car.

After my Supra got stolen and I was in Texas with all my receipts in Oregon, I learned my lesson. Then my Integra got stolen so I decided to take some time and become an organized **** when it came to reciepts and pictures. And no matter what, reciepts always show more proof than a picture will. You can switch rims with a buddy for a picture, but if you can only provide a reciept for someprimax 13's, then guess which ones the insurance is going to pay for. Just be organized and upfront with the insurance company and they will work with you after a while. Just don't bow down to their first offer. You pay them money to insure your car, they don't pay you.
