Radiator fan engagement temperature

Radiator fan engagement temperature
What is the engagement temp for the fan? Is there a way to engage at a lower temp?
New radiator and cap. Still gets hot (3/4 gauge) after driving in hilly country, but not in red zone.
Temp can be moderated with cabin heater. No AC running.
Considering R/R thermostat.
Suggestions??

Start by replacing the thermostat, and then thoroughly bleed the cooling system.
