Engine mounts / engine position
Would there be something comparable to a 'ride height' for the engine similar to the proper height at which to apply final torque to suspension bushings? Engine mounts are just engine suspension bushings right..rubber, through bolt...

Not really, no. The reason for torquing down suspension parts at ride height is because of flex and movement. Just replace the mounts one at a time. If you're doing a swap, it really doesn't matter.

No...but if you take off the T-Bracket on the back of the engine/transmission, keep of the bolts loose before you torque them down. If you put one bolt in at a time and tighten each down, you would get them all to line up
