Is the heat hot or just lukewarm? did you bleed the system after changing the sensor and thermostat? Which sensor did you replace? Test this one

I believe the sensor in the thermostat housing is the temp sensor that brings on the cooling fan. In other cars, I have seen the water pump blades wear, break or seemingly , just dissolve. Check to see if your water pump is flowing enough water thru the rad. This , after you know your rad is not partially stopped up. I pull the thermostat and remove the big plug behind the exhaust manifold and flush out the block with a water hose pressure. Take off the rad and flush it also. With the thermostat out you can cold water to watch the flow thru the rad. Or let it heat up with the cap off and watch flow when the thermo opens. DO NOT leave the thermostat out for any reason.
