What type of oil and weight is best for my set up?

What type of oil and weight do you use?
Ok, I've searched and read through almost 10 pages of archived topics and none of them were clear enought to answer my questions.
Normally I like to stick to reline or royal purple oil in my NA cars but some say that i'm just paying for the name and all that. I used to use mobile 1 synthetic but i was told that they had changed their formulas or something and are now not as efficiant of a oil. I dont know if this isn in fact true but i switched after I herd that from a few people.
I currently run Casterol GTX synthetic in my built GSR. I was just wondering what all of you are running and how you liked the performance of that oil.
Also about the weight, Im currently running 10w40. Being that I live in Arizona I dont really have to worry about really cold tempatures (nothing under 40F in the winters) But normally I switch to a 10w30 in the winter anyways. Should I switch to 30 in the winter with the builtboosted motor or stick to the 40? I've also noticed a lot of people run 5w30 or 5w40 in the winters, should I think about that or does it not get cold enough here to worry about going down to the 5w?

with multiviscocity oil 10w30 it means 10 when cold, w stands for winter grade and 40 when hot.
the wieght rating of oil goes up when it gets HOT. oil needs to be hot to work. wether you run 10w30 or 10w40 its going to flow the same when cold... the reason you run lower cold iweght oil when its cold is so when you start the car it can flow to the head quickly enough to prevent wear
