1000cc injectors would be a good size for your power goals on e85.

You could probably get away with 880s, but might as well go with 1000s because 110 is going to be $$$$$$ to fill up everytime.

I'm using 1000s and making 435 whp on E85. With my setup (H22) I'm just about out of injector capacity. With race gas and 1000s, I made 465 whp and had lots of capacity left.

Since all EMS's (even uberdata) can idle 750's like stock (and 1k's w/little effort), a 1k injector for E85 will be fine. The thing to remember is it uses 20-30% more fuel at idle, not just WOT. So the largest usable gasoline injector your EMS can idle can be sized 20-30% larger.
I'd say go with 880's or 1000's and you'll be fine.
