Default O-ringing head vs ringing block?

Is there any real difference between oringing your cylinder head vs o-rinigng your cylinder sleeves? Pro's? Cons?

never o-ring a honda head, the aluminum is too thin on the deck
plus anytime you have to surface the head, you must recut the groove deeper
