Default Exhaust temps too high??

My setup consists of a H22 turbo on AEM EMS. EGT gauge is a Defi D Gauge and probe is 1" away from the flange on #3 exhaust runner. The drivability was tuned by Carlos aka 'Bubba' from Do It Dyno.

Now at idle my cars EGT is about 800F. When I'm driving under 3200rpms with a load, I can get my EGTs up to about 1500F if I really wanted to. Who knows.. maybe even higher. The funny thing is when I'm above 3200rpms it wont go above 1400F, even under boost. I usually have to downshift if theres a slight incline on the freeway when I'm going 60mph, because its right at 3000rpms, and when I give it load, the EGTs will climb up before my RPMs so I cant get it to stay at 1400F. I was wondering if I had a problem here? I always watch the gauge and make sure it doesnt get above 1400, but its a pain downshifting all the time just to get the temps down.

Should I try advancing it? Any suggestions? Will it still be safe to hook up a wideband O2 without damaging the sensor?

I read in a manual that piston engines run 1500*f normal. mine gets up to 1600* at 18psi around 7200rpm and up. 800*f-idle 1300*f part throttle

Are you serious? I thought 1600F was the melting point for pistons. Was I told wrong?
