When you hook up a HU ....
Can you hook it up, like a switch in a wire or something to not come on when you turn the key?.
So when you start your car, your HU does automatically come on, but you can switch it back on if you do.
and not power, because i dont want to re-do the clock all the time

I think it was clear enough. Yes you can install a switch on the ignition wire and turn it on/off whenever you want to. The ignition wire would only have power when the key is on, so your added switch would only control the line with the key on.
right, would that affect the way it worked?
also, if it was off, could i manually turn on the HU?
like start car ....
wait a little bit, let it warm up
then turn it on, with the power button
(switched off)

What's wrong with the src button?
Or just get a detachable face.
But yeah, put a switch inline with the aftermarket HU's red wire. It will work exactly as you would guess it would work. On a stock radio, it's the yellow/red wire for most Honda/Acuras.

When the key is off, the headunit gets no power. So even if you turn your switch on, you're connecting a wire that needs power (HU) to a wire that does't have power (from ignition). With that switch, you would only be able to turn off the headunit when the key is on. You will not be able to turn it on if the key is off. The latter could be done by wiring the switch to constant power, but then you might forget that it's on, and when you leave the car, the headunit would still be on.
