What kind of info on the fly does the VAFC display? Does it display air/fuel ratio, RPMs, what else??

Straight from the VAFC manual:

You can monitor up to 4 at the same time.

1. Intake Pressure
2. Throttle Position
3. Engine RPM
4. Air Correction Ratio
5. Ecu VTEC solenoid output
6. V-AFC Vtec solenoid output
