A few updates:
I decided to swap out the o2 sensor since I have spare used ones (took out the bosch sensor and put the old one back in) and the car drove perfectly for awhile, then driving it later it got some minor stuttering/hesitation for about 10 seconds. Last night I unplugged the ecu fuse for about 10 minutes, put it back in and drove it with no issues other than getting a CEL code 43 this time, only since swapping the o2 sensors.
This morning I bled the coolant and it's been running good.
Once it warms up it idles between 600-800 rpms in park (what I posted before was a mistake in reading the rpm gauge).
I'm still getting poor gas milage. Since the odometer isn't working, I have no idea what my mpg is, but when I put 3 gallons in it doesn't last very long and I don't really drive that much.
There seems to be something odd with the ECU. Every time I put in a replacement part the car runs fine for awhile then it starts having issues after it has been shut down and cooled off for a few hours. I'm starting to think it's glitching out and giving me different codes. When it started to run like sh*t again two days ago before the o2 swap I was getting no trouble codes, but when it runs seemingly normal I get code 43. I can't seem to get a handle on this.

bosch is junk. again...
i hate to sound like a broken record but i recommend getting OEM DENSO sensor - they made the sensor that your car originally came equipped with (hence OEM). They're cheap on Amazon and after you replace you can cross the o2 sensor off your list of possible faults.
find the correct part at www.densoaftermarket.com and order from www.amazon.com or your local parts store if you're in a rush.

when did you get it? you got used ones from the junkyard right? for all you know they could have been the ones original to the junk car.

right, so theyre >>8 months old. they could be 18 years old. I'd pick up a new Denso part for 42 bucks. especially since the ECU is throwing a code for it.

...but it isn't throwing a code for it specifically. 43 is "fuel system supply" so it could be a number of things. Also, the crappy Bosch sensor never threw a code 43. All I got then was a 17 for the VSS. Tomorrow I will install the NGK o2 sensor I have and see what happens. If I get the same results, I'm ruling out the o2 sensor as the culprit. When I have exhausted all other possibilities I will spring for a brand new OEM/denso part, but right now my funds are limited.

I do have the full version and have been reading over it. I don't have a digital circuit tester but I will start going over these steps as soon as possible. I haven't had any stuttering issues, even though I'm still getting code 43, the car has been running good with the exception of a really minor occasional rough idle right after warm-up.

Okay, its been a year now since this whole ordeal started and for the last 11 months I've been driving around with occasional CEL codes and today I finally installed a brand new Denso o2 sensor and it appears to be running fine with no issues but just now I got 3 trouble codes:
1 Oxygen Sensor "A" (Primary) defective circuit or unplugged / defective sensor
17 VSS (Vehicle Speed Sensor) defective circuit or unplugged / defective sensor (this has been a long-time problem due to an accident)
43 Fuel Supply System defective or malfunctioning fuel supply system
is it possible I got a defective o2 sensor that's giving me codes 1 & 43 or should I be looking at something else? The car is running way better since I put this new o2 sensor on and I didn't get any codes earlier today. Now I'm stumped again.
