I hear that the narrower tire is, the better the grip in the slipperiest conditions.
I have a new '08 Civic Sedan LX that came with 205/55R-16's.
The largest tire I would want is the stock (for the DX model) 195/65R-15.
But I was also thinking I might want to give 185/65R-15's a try,
since I cannot find 185/70R-15, 185/75R-15 or 175/75R-15.
and the 185/65R-15 is only 0.25" shorter in radius (0.5" dia shorter)
than the stock tire.

It's not necessarily a bad idea. But I would still try to match the outer diameter of the tire size to that of the stock tire size. Which means I would get 195/65-15, not 185/65-15.
Both the Blizzak WS-60 and the X-Ice Xi2 are available in 195/65-15, in stock at the Tire Rack.
