a wideband thought?
arent the 5wire O2s widebands? like VX's..
red, yellow, white, orange, black?
if so ynot just plug these in for ur "tuning" session into your sencond bung if u have one or for these purposes...blah, or whatever, hook up all the wires to heater...signal, etc...(COULD SOMEONE LIST WHAT THESE OTHER WIRES DO)
and measure with a good volts meter or some device, the voltage through the powerband?
obviously no logging or stoich readings and no LAMBDA display but 1 volt is stoich so aim for that with your tuning system?

why cant you just send thr right voltage to the heater, and u dont really need a conversion if u know the raw volt numbers correlation to the LAMBDA scale right? does neone know the correct volts toi the heater, should be 5 or 12 V right, which you can get through constant power.
do some reading here http://www.diy-wb.com/info.htm . you need a driver circuit.

A short answer to your question of why can't I just read the voltage and translate it myself is that part of what the circuitry (controller) does is provide very stable and accurate reference voltage/current required by the sensor, and in return gives you a simple voltage as output.
In other words, there is no 'voltage' to measure without a controller.
By itself, the 5-wire sensor sinks current in complicated ways. The controller handles the complexity and give you a simple A/F --> voltage output.
If you don't have the time, inclination, or training to get through the OZ material, you don't want to mess with the sensor.

i can "get through" it just didnt want to...

There are several options for a display for the output of the DIY-WB controller.
The simplest, is a plain DVM (Digital Volt Meter). Use the Vout to AFR chart http://www.diy-wb.com/v_out.htm
