Default Tuning

Does tuning involve just fuel and air ratios, getting it to stoich? Or is there more? When I hear people talk about tuning, all I hear is air this, fuel that. That's all it is, right? Sorry if it sounds like a stupid question.

Timing too. Usually you want a/f ratios a little richer than stoich. Around 12.7:1.

Ignition timing,cam timing, fuel pressure, VTEC engagement, air/fuel maps, ignition timing maps. The more goodies you have on your car, the more tunable it is.

there's alot to tuning, most of what was mentioned.. but also the geometry of the car. The motor is just one part of the car... there is suspension and weights to be concerned about as well. The overal tuning of a car will help make it successful.
