Default tranny greasing

I am changing out my flywheel and clutch and was wondering if someone could tell me if Im doing everything right. I removed the cv boots big end to remove the tranny because cv grease is cheaper than tranny fluid. I hosed all parts down w/ brake cleaner (including the bell housing) and wiped them down. I put a light amount of cv grease on the tranny shaft and put the berring and fork on. Right or wrong? Now Im ready to refill the cv joint housing w/ grease and reclamp them on. How do you keep the grease from coming out when putting back on? And how full should they be? Also the throwout berring had dried grease on the inner ring and the shaft when I removed it from the old setup. I left the one shaft to the shifter on (w/ boot). Didnt know how to remove it and really wasnt in the way w/ tranny on the floor. Will cv grease work for the high melting point grease? Car is 92 civic eg, Flywheel is Fidanza, and clutch assy. is exedy stage 1. Any help or you dumb *** comments are appreciated.
