Default thermostat starting to stick

so today i am driving on the freeway (boosted built sohc 5psi) and i notice my temp gauge jacks up from alitte under half to 3/4 way to "H" on my coolant temp gauge (stock gauges) and i was like wtf so i ease up and coast for about a mile or 2 and it wouldn't let up. so a min later it goes up alittle more then all of a sudden it drops. well like 2 min later it did it again and i was like wtf again. its never done this to me before. so is my thermostat sticking or do i need to beef up my cooling system? and if i need to get a new thermostat, should i just get a lower temp one (160F opposed to stock 190F) or would that not be a good idea for winter (i live in NC, moderate winters) thanks

Might be a sticky T stat. OEM stats have worked the best for me. I don't think getting a cooler stat is wise. Stay with the stock temp.

Might also be a bad thermostat ground, temp sensor, or air in the cooling system.

my thermostat ground came loose the other day when i was on the freeway and the car just sputtered and died and i went through checkign all my fuses and grounds and i found it was loose and i just hand tightened it and its been being gay since. i tightened it with a wrench since. should i take it off and clean the connections up?
