Stupid Question, but something im wondering.
If you open the top of your clutch resouvur and then opend your bleeder screw on the slave cylinder and just let it drip out.. would that bleed the system? Keeping in mind youd always keep the resouvur full.
You can do that. Just crack it open and connect a tube to a container. Fill the resevoir to max and pump it 3 times. check the level coz it drains out pretty quick.
NEVER LET THE RESERVOIR go EMPTY coz you'll get air in the lines. keep cycling it until it clears out.

you can't just let it drip out of the bleeder screw. When you release the pedal, it'll suck air back in through the open bleeder. That's why you need the tube and container. Fill the container with fresh fluid till the end of the hose is covered, and keep the reservoir full.

I was wondering if you could just bleed it by gravity without having to depress the pedal.

While gravity is making the fluid run downhill, it's also making the air bubbles move uphill... When you pump it you make the fluid move fast enough to push the bubbles along with it.
