In theory, yes.
However if they are not "matched" in their resistance (everything has a certain amount of resistance), the flow will not be balanced. One will flow 41 and the other 39. The one flowing 41 burns out, and then the other has to flow the total 80. It blows out also.
So dang it, don't do it. Just get a relay that is capable of more than the current flow you expect. Think about the "power relay" Honda's use and try to find a rating for it.

Also. What AWG wire do you think they calculated(well usually they just look at a chart) to be used with 40A relay? Do you think they designed the wires to hold 80A? No. So don't do it. You run the possibility of melting them, then shorting something.
