Polish piston necessary??
Not sure if you know the difference, but you are supposed to 'prep' a piston... which is basically sanding the sharp edges to smooth them. It doesn't necessarily look 'polished', but is something that should be done to every new piston.
If this (your pic) is actually polishing of the piston... it might be good, as it would smooth the piston dish/dome a bit, making it less prone to hot spots.

That looks like an Endyn picture....and I believe the piston on the left is the prepped piston....not the one on the right.
EDIT: Notice how there are no sharp edges on the one on the left.
