operating temperature on modified engines

I am not concerned for my car as much as I want to know if anyone
can share a rule of thumb with me. My car has 10.85-11:1 CR B18C
and curious on where the ideal operating temp would be. I run a
Fluidyne radiator with honda coolant, GSR/ITR thermostat (same)
and a bit of Redline water wetter. My engine is P72head, ITR block
and was assembled in Sept02. I live in FLA and we are beginning to see
hot *** temps out here, I am noticing my temps are rising a tad. My
guage never sees above a skoche shy of half on the GSR cluster. I am
wondering if boring a single hole about this >O< big in the thermostat
ring itself for more bypass to run a tad cooler. Where on the guage
would be ideal for slightly modified engines?

hmm. thats cool, just curious want to see if there would be any benefit to splitting the diff between where a GSR runs stock (1/4 guage) and its current position... (about just shy of half)
