it's the farthest it goes before it goes back that is what you are running. get a fpr and a fuel controler. if you want to really control it.

What you are seeing is normal to the meter that you have...I am assuming that you have an Autometer, or similar guage correct?

Pull the plugs and see what they look like. The guage should show a fairly constant number as you are accelerating at part/full throttle, other than that the ECU is compensating for either a rich or lean condition(any varience from 14.7/1)...the only time that the ECU does not do this is at full throttle where the ECU goes into a closed loop mode and does not read the O2 signal(s).

IT IS NORMAL FOR THE AIR/FUEL GAUGE TO JUMP FROM LEAN TO RICH...LEAN TO RICH...YOUR AIR/FUEL GAUGE IS NOT GOING CRAZY AND YOUR CAR IS RUNNING FINE...IF YOUR SPARK PLUGS ARE WHITE THEN JUST TURN UP YOUR FPR 55PSI WITH THE VACUUM OFF SHOULD BE GOOD.
