5 thou sounds right, could even be 2 thou if the shop was up for it...
not sure though, im not a professional...
if you are only resurfacing, shouldnt need more than 10 thou to clean it up...?

If your head is not warped and doesn't have deep scratches then 0.005 is the norm.
If you have severe warpage then you may have to get the head straighten before resurfacing.
