Default Compression/Leakdown Test

So I finally got my swap running right. I built the fuel maps to read 13.5:1 to 14:1 air fuel and took it for a drive, everything seemed all right until I brought it back to my house to check for leaks, etc. It started going up and down with the idle like a bad tps, so I went to drive it back into the garage and it stalled out. When I went to start it back up, it definitely sounded like it wasn't firing right, so I checked the timing and it was still dead on. I got spark, I got fuel pressure, so I went on to do a compression check. I got 240,240,210, and 240. Cylinder 3 is definitely low, but it is still making compression. I did notice a little white smoke but it was rainy out that day so I figured it was just condensation. But now I am thinking headgasket, but I'm not sure. Anybody out there that can give me some pointers on a leakdown test? And what to look for? I know that if air comes out the dipstick then the rings are bad, but what else?
