It's possible and has worked but I do not recommend and never do it myself. At standard bore you can expect about a ~0.25:1 increase for every 0.010" or 1 layer so with 2 layers gone you'll be ~0.50:1 up which isn't all that big of an increase. The biggest issue is sealing, where a stock headgasket has a little "play" to seal, you won't get this with a 1 layer. I personally wouldn't mess with the headgasket, if you wanna bump up your compression do so with pistons. Just my $0.02

Yea basically, copper spray is cool and will help too.
