Default Question about Oil Guage

last night was freaking cold out and i noticed that the Oil Guage was in the middle. Then 3 minutes later, it goes up and it's near H. Then again a couple minutes later is going back down under the half mark. What could make my car seem like it's close to overheating on a cold day?

I have yet to see an oil guage in a EF chassis that was not aftermarket. FYI my Temp guage drops to zero above 5,500 RPM with my ZC, I think its a ground but still havent figurted it out yet.
