it really depends how far you want to go with it and what you feel needs to be changed.. according to the helms pretty much every nut, bolt and gasket should be replaced whenever you remove anything.. i personally believe in reusing "good" parts so i only replace the components that i feel are necessary at the time..
here's some of the parts the helms suggests for replacement:
-headgasket (duh)
-exhaust manifold gasket
-valve cover gasket and indiv. cyl seals
-cam seals (all 3, one on ea. cam by the gears and the seal on the end of the exh. cam-)
-distributor o-ring
-intake manifold gasket (if you remove the intake mani that is, i always leave it attached and just lift off the entire assembly together)
-and a few other small misc. parts, including a tube of hondabond to seal the edges of the cam caps and a quart of oil or assembly lube for reinstallation of the cams
according to the helms all of these should be replaced with new, but i generally stick with replacing the 'core' components- the headgasket itself and new head bolts (if you've got the money/interest now would be a good time to upgrade to arp studs). now don't get me wrong with not replacing any other gaskets/seals, i inspect and clean every seal as it's removed and if it's condition is questionable i'll replace it, but i don't blindly buy replacement parts when they aren't necessary..
don't forget to add coolant to your list as well.. you will lose some when unplugging some of the hoses (especially if you do it the way i do and leave the intake mani attached to the head)
BUT BEFORE YOU DO ANYTHING, the first step is to pick up a helms manual if you haven't got one already..

cool.. thanks for information.. i ordered headgasket kit previously and had quite a few items i didn't need, so i'm just trying to see if i can come up cheaper.. i don't need intake gasket, headgasket kit also includes valve seals which i dont need and couple other things..
you definately don't need the upper end gasket kit just for a headgasket swap.. that kit is more intended for a complete rebuild..
here's a quick little read about the upper and lower gasket kits, what's included and how overpriced they are!
