Spoon headgaskets
What is the difference between the 1 piece and 2 piece headgaskets? Does one raise the compression more than the other? Which is better for an all motor application?

generally speaking, the thinner the gasket, the more compression increases. chances are if you are building an ALL MOTOR application you are going to want more compression, therefore a thinner gasket(assuming you have enough vavle clearance). If you gasket it too thin, your valves will smack against your pistons, which is not a good thing
for turbo applications, generally you will want a stock gasket and less domed pistons to lower compression. It isnt a great idea to use a thicker gasket to lower compression, better to use hard parts(pistons, rods, etc) to lower compression rather than a flimsy gasket which is more likely to fail. thats not to say a thin gasket to increase compression cant fail either though.

not sure of exact measurements, one is just thinner(more compression) than the other. the spoon 2 layer gasket typically raises compression around .3 to .4 more than stock. This is all relative though depending if the head/block has had any machine work done and what cams/pistons you are using.
