Default Car overheating.....

I installed a Race version of the hondata intake manifold gasket, followed sgts directions in an old post to re-route one coolant line back to the the thermostat housing (spigot). Well if I drive without getting on it, it wont over heat, but if I get on it and go over 8000 rpms, then it gets hot, i did notice that the fan wont come on and when the temp was sky high, the vents in the cabin were bone cold? Could it be the thermoswitch, compression is fine 300 psi in all cylinders. Couls the thermostat be stuck closed. Also the upper radiator hose is hot, so the coolant is flowing. I hooked the fan up to the battery and it worked...Is there any way I can test the thermoswitch?WTF
