Honing is refinishing the cylinder walls with a honing stone to give a good crosshatch finish for the rings to seat in against. It removes any light scratches and helps the rings to seal properly. You can reuse the standard bore pistons in this case, with new standard size piston rings, of course.
Boring of the engine block is done when the cylinder walls are too damaged for the rings to seal properly. The block is bored using a boring bar and bit to achieve the desired bore. In this case the pistons that are installed in the engine are oversized, along with the rings. The cylinders are then finished up with a hone and it is ready to go.
