I have 140K on my 08 Accord. I changed the timing belt at 98K and the plugs around the same interval. Is there a suggestion on when I should consider doing the belt and plugs again?

I'm also wondering when it comes to fluids such as power steering, brake fluid, and coolant are there maintenance intervals these should be charged, or just keep an eye on the fluid color and change when it's dirty?

Your car has the Maintenance Minder, but, if you did not use the maintenance minder, then:

105,000 miles or every 7 years for the timing belt.
105,000 miles for spark plugs.

30k for transmission fluid.
60k or 5 years for coolant. (I change every 30k)
Brake fluid every 3 years.
No set interval for power steering fluid; however, I would still replace periodically.

Regarding coolant change, do you do a flush every 30K or just a drain and refill? I had my radiator go at 98K and never changed coolant up to that point. I think changing every 60K or 5 years would be a good preventive measure.

I just drain and fill coolant at regular intervals.
