Default AEM EMS1 vs. Hondata S300

I have a 93 EG with a GSR swap, cams, header, intake, mild headwork and an EMS1 (not sure if 1000 or 1060) all on nitrous. I just picked up a JRSC supercharger and the plan is to do the LHT intercooler, CNC s-tube and 70mm throttle body. The car will be used on the street (not my daily, more of a fun toy) and I am going to autocross when it gets started up again and I am setting it all up to try some time attack. Eventually I want to build the B20 bottom end I have and swap that.

Here is the problem I am running into. I am decent-ish at tuning but computer innept. I use computers a fair amount (3d printing, CNC etc) but struggle with the more advanced parts. I am getting some weird things happening and having trouble with consistency. I am struggling with getting the Air Temp Fuel Enrichment Table, Warm-up Enrichment Table and Engine Start to all work together. I will not be happy until it works like factory.

Also the other day I was out doing some cruising and tuning, then the car suddenly went really lean and almost died. I had to keep my foot in the throttle to stay running. Then about 30 seconds later it fixed itself. I have had a few other weird things like that in the past. I am also having troubles getting the AEM wide band to read correctly in the firmware, I had my brother look at this (he is computer litterat, and tunes for me while I drive) and he couldn't figure it out. And I really find the data logging clunky and useless. I used Crome back in the day and the data logging was WAY better. Also as I tune I find the fuel table on the EMS1 lacking resolution (haven't looked into this) and there aren't enough data points to tune as precicely as I want. ALSO (this is turing into a long list!) Idle tuning sucks and A/C requires running a wire to the ECU and more tuning. Same for the secondaries in the intake.....

I have been thinking about the changes I will be making and how hard it might be to get them working on the EMS, like MAP sensor, injectors (this should be easy), getting the wideband working and the one that has recently come up is possibly switching to Coil on Plug because MSD doesn't make part for their billet distributor anymore.

Soooo, here is the question. Is the EMS1 problematic on a daily driver or do I just suck at tuning? Second thing is I have been looking at the Hondata S300 and I looks like I can, more easily, get the car/tuning to where I want it (factory like drivability and reliability). And finally would the S300 be easier to set-up / change sensors etc. It seems to be more up to date than my outdated EMS1.

ps. I also looked at the Moates Demon 2 but I want to go main stream for ease of use.... I think!?!?!?!
