Default Is it the MAP Sensor

all of the symptoms of a bad MAP are consistent with my car's problems. When I tested to see if it was the MAP I unplugged it and the car shut down. Does that mean that the MAP is fine? or is it just shutting down because the car knows there was no MAP sensor plugged in?

You will need to test the MAP itself. To verify that the MAP is working correctly and is working within voltage spec. Check out this link where phootbag dispenses a bit of knowledge. https://honda-tech.com/forums/honda-accord-1990-2002-2/map-sensor-test-3010261/

Our cars are Speed Density cars, the two main components that calculate air density are the MAP and Air Temp sensor. There is no MAF to do that on these Accords.
